And how hot should the water be for effective heating ? I'll be mounting pex between floor joists on 16 in centers with heat dispersing aluminum plates.,
I also suspect that I'll be running a pair of water lines between each floor joist.

Warmer than the air.

Too hot, and you get lots of thermal expansion troubles. I'm guessing about 80F

My hydronic floor system is set at 35 deg C (95 deg F) out of the heat pump.

The higher you take the water temp the less efficient the system is.

Your wooden floor will have poor heat transfer (wood is an insulator) and you need good insulation under the tubing
